Prepare red beans

Cover red beans with water and leave to soak and soften for about at least an hour.

Make red bean paste

Transfer the water and soaked beans to a pot over medium heat and add sugar. Bring to a boil and simmer with occasional stirring until the beans have softened and become a lumpy paste. remove from heat and let cool.

Mix wet ingredients

In a large bowl, combine eggs, sugar, and honey and whisk well until the mixture becomes fluffy.

Sift dry ingredients

Sift flour and baking powder into the bowl and mix all together. Stir in 1 tablespoon of oil. Add 1-2 tablespoons of water if the mixture is too thick. Set aside to rest in the fridge for 15 minutes.

Cook pancakes

Dip a paper towel in vegetable oil and coat the bottom of the pan with the oil. Pour about three tablespoons of the batter into the pan. Once the surface of the batter starts to bubble, flip over and cook the other side, taking about 1 minute and 15-30 seconds to cook one side and 20-30 seconds on the other side.

Assemble

Make a sandwich with red bean paste. Put more red bean paste in the center so the shape of dorayaki will be curved (the middle part should be thicker). Wrap dorayaki with plastic wrap until ready to serve.
