In a saucepan combine whipping cream, vanilla extract and unsalted butter and boil the mixture.

In a bowl, place the semisweet chocolate then pour the whipping cream mixture. Let it set for 5 mins before mixing. Once the chocolate is melted chill in the fridge for at least 1 hour or until it sets.

In a bowl combine the all-purpose flour, brown sugar, milk, shortening and salt. Mix together until it forms a dough. rest the dough in the chiller for 5 mins.

Second Dough

Combine the all-purpose flour and shortening in a bowl. Mix well until well combined.

Get the first dough and roll it into a rectangular shape. And spread the second dough covering two-thirds of the first dough. Fold the combine dough like a letter fold and rest in the chiller for 30 minutes.

Get the chilled dough and dust some flour onto the working surface and roll the dough half inch thick.

Take a piece of dough and flatten with a rolling pin as thin as possible and try to make it round. Scoop a spoonful of the filling and place it in the middle. Gather the sides of the dough over the filling and pinch together to close. Take a round cookie cutter and insert the filled dough inside the circle, then with pinched side down press it against the counter to take form.

Cook the hopia in a pan until both sides are brown. Chill for 3 mins before serving
