Tangy and sweet ribs made flavorful with Calamansi!
Whisk together all the ingredients in the bowl then season with salt and pepper.
In a bowl, combine the lemon zest, mustard, paprika, garlic powder, onion powder, salt, and pepper. Mix to incorporate everything.
Rub the marinade unto the ribs. Let it marinate for at least 1 hour.
Once the ribs is done marinating, transfer to a baking pan then cover with foil. Bake on a 350F oven for 1 hour and 30 mins.
Remove the foil cover then brush both sides of the ribs with the honey calamansi glazed.
Increase the temperature of the oven to 400F then bake the ribs for another 20-30 mins.
Once done, let the ribs rest for atleast 10 mins before slicing. Serve with fries or rice and the honey calamansi sauce
Combine pork stock, the juice from the ribs and the leftover honey calamansi glaze in a pot. Boil the mixture until it thickens into a sauce consistency. Season with salt and pepper.
