In a pot cook the noodles according to the packaging. Remove from pot then rinse with water to stop the cooking process. Set aside.

In a wok or pot, add oil then saute the Chinese sausage for a minute. Add the chicken and cook until browned.

Add the garlic, red onion, ginger, white part of the onion leeks, and carrots, then saute until aromatic.

Add the mushrooms and its liquids to the pot, then boil the mixture for three minutes. Pour the oyster sauce, soy sauce and shrimp stock. Simmer for five minutes.

Add the shrimp and cabbage then cook for two minutes then toss in the noodles. Drizzle the sesame oil then stir to incorporate everything.
