Makes 5 to 6 servings
Preparation and cooking time: 1 hour
Ingredients:
Beef Broth:
10 cups water
1 onion, peeled & quartered
4 cloves garlic, crushed
1 teaspoon peppercorns
2 bay leaves
1 tablespoon salt
1 tablespoon green onion, chopped
1 kilogram beef brisket
Sauce:
2 tablespoons cooking oil
1 red onion, minced
2 cloves garlic crushed
2 tablespoons ginger, minced
¼ cup soy sauce
1 teaspoon ground black pepper
¼ cup sugar
1 piece beef broth cube
2 pieces star anise
2 tablespoons green onions, finely chopped
Garlic chips for garnish
Garlic Rice:
4 cups of rice
2 tablespoons oil
2 tablespoons garlic, minced
1 tablespoon spring onion, chopped
Garlic chips for garnish
Salt & pepper to taste
Procedure:
- Pour the water in your pressure cooker and bring to a boil.
- Put-in all the beef broth ingredients and cook until the meat is tender (about 30 minutes)
- Slice the boiled meat in cubes and set aside beef broth.
- Heat up oil over medium heat. Saute the onion, garlic, and ginger.
- Add the beef and saute. Mix in soy sauce, 1 cup of beef stock, star anise, and beef cube. Stir and then bring to a boil.
- Add the sugar and stir.
- Season with salt and ground black pepper. Stir and then simmer until the sauce thickens.
- Garnish with scallions and garlic chips on top.
- Cook garlic rice: Heat up oil and saute garlic. Mix in rice. Season with salt and pepper. Turn off heat and mix in spring onions. Garnish with more garlic chips.
