Makes: 4 – 6 servings
Ingredients:
555 Spicy Tuna Paksiw with Puso ng Saging:
3 cans, 555 Spicy Tuna Paksiw 155g, juice and meat separated
1 piece whole white banana heart (150g), sliced thinly
1 piece small red onion, sliced
Salt, to taste
555 Tuna Spicy Caldereta Bake:
Tuna Filling:
3 cans 555 Tuna Spicy Caldereta 155g
1 tablespoon oil
1 tablespoon garlic, minced
2-3 pieces green olives, sliced (optional)
1 small piece of hamonado longganisa/chorizo/chinese sausage, 1/8 piece (8g) sliced
½ teaspoon white sugar
Salt, to taste
Parsley, to garnish
Garlic Rice:
2½ cups cooked white rice
1 tablespoon oil
1 tablespoon garlic, minced
Salt, to taste
Mashed Potato:
2 pieces medium potato, boiled and mashed
1 tablespoon butter
3 tablespoons evaporated milk
½ piece leek stalks, sliced
Cheese Layer:
1 pack all-purpose cream 125ml
Grated cheddar cheese 45g
Procedure:
- Prepare tuna for paksiw
Strain the tuna flakes from the paksiw sauce Set aside both tuna flakes and paksiw sauce.
- Cook banana hearts
In a pan over low heat, add the paksiw sauce and bring to a simmer. Add the sliced banana hearts and simmer for about 7-10 minutes over low heat until the banana hearts soften. Be careful not to dry up the pan.
- Add onions and tuna
Once the banana hearts soften, add the red onion and 555 Spicy Tuna Paksiw. Toss to mix and take off the heat.
- Make tuna filling for caldereta bake
In a sauté pan, heat oil and add garlic, olives (optional) and hamonado longganisa/chorizo/Chinese sausage. Sauté until garlic turn brown. Add the 555 Tuna Spicy Caldereta and white sugar. Stir and simmer on medium heat for about 5-6 minutes. Be careful not to burn the bottom. Set aside.
- Make garlic rice
In a sauté pan, heat the oil and add the garlic. Sauté the garlic until it turns slightly brown. Be careful not to overcook.
- Mix in rice
Add the rice and toss it in the hot oil and garlic. Sauté until heated all the way through. Set aside.
- Make mashed potato layer
Mix the boiled potato, butter, salt, and milk in a bowl and mash. When the consistency is at a spreadable level, add the sliced leeks. Mix. Set aside.
- make the cheese layer
Mix together the cream and grated cheese. Set aside to chill.
- Assemble
Fill the bottom of your aluminum baking dish or ovenproof baking dish with the cooked garlic rice. Pat the surface down with a damp rice paddle to flatten the surface. Pour the 555 Tuna Caldereta filling on top of the garlic rice.
- Add mashed potato layer
Carefully add the mashed potato in teaspoon-fulls all over the surface of the tuna filling. Carefully use the back of the spoon to flatten out the mashed potato layer until the tuna is all covered up.
- Add cheese layer
Add the cream and cheese mixture on top of the mashed potato mixture and level the entire surface using the back of the spoon.
- Bake
Bake at 170 degrees Celcius for 5-7 minutes or until the top turns brown.
- Garnish
Garnish with chopped parsley and serve warm.
