Lay the bacon out on a baking pan with parchment paper and bake in a preheated oven for 204°C/400°F for 10 minutes. Pull out the bacon and turn each slice over.
Mix the honey and brown sugar until it turns into a paste-like texture.
Spread the paste over the bacon slices and bake it again for another 10 minutes or until crispy. Cool the bacon completely and chop into small pieces.
In a big cold bowl combine the whipping cream, condensed milk and salt.
Whip the ice cream mixture until stiff peaks and carefully fold in some of the bacon bits. Reserve some for topping. Cover the ice cream mixture with cling wrap and let it freeze overnight.
Before serving, sprinkle some bacon bits and drizzle with honey on top of the ice cream.
