Bacon Peanut Butter Chicken Fry

Fried Chicken
 1 1 whole spring chickencut into bitesized pieces
 salt to season
 ground black pepperto season
 2 tbsp liquid seasoning
 ¼ cup crispy bacon bits
 ¼ cup roasted peanutschopped
 1 ½ cups Panko (Japanese breadcrumbs)
 1 cup all-purpose flour
 2 beaten eggs
Peanut Sauce
 2 tbsp unsalted butter
 3 garlic clovesminced
 ¾ cup chicken stock
 ¼ cup brown sugar
 ¾ cup peanut butter
 1 tbsp soy sauce

On a plate, season the chicken with salt, pepper, and seasoning. Marinate for 20 to 30 minutes.

Chop bacon and toasted peanuts.

Mix the panko, bacon bits, and peanuts and season with salt and pepper.

Dredge the marinated chicken in flour then dip in beaten eggs and cover with the panko mixture.

Deep fry the chicken pieces in batches for 4-5 minutes at 150°C. When done remove from oil and let it rest a bit.

Place pan over low heat and put in the butter. Saute the garlic until golden brown. Mix in the brown sugar and peanut butter and simmer for 2 minutes.

Add soy sauce and stir well. When done serve the sauce with the fried chicken.
