Batwan Fried Chicken

A delicious fried chicken with sweet and sour glazed made with Batwan!

Chicken
 500 g chicken thigh fillet
 1 tsp garlic powder
 1 tsp paprika
 1 tsp onion powder
 1 cup rice flour
 ½ cup cornstarch
 salt and pepperto season
 oil for frying
Batwan Glaze
 3 tbsp atsuete oil
 2 tbsp chopped garlic
 1 stalk lemongrasschopped
 1 tbsp grated ginger
 Batwan marinade
 ½ cup brown sugar
 1 tbsp soy sauce
 1 tbsp fish sauce
 salt and pepperto season
 1 tbsp unsalted butter

In a bowl combine chicken, garlic powder, paprika and onion powder. Season with salt and pepper. Marinade for at least 30 mins.

In a bowl, combine the rice flour and cornstarch. Coat the the chicken with the breading mixture.

Fry for 7-9 mins or until golden brown.

Coat the fried chicken with the batwan glaze then garnish with spring onion. Serve

In a pot, combine the water and batwan. Boil until the batwan is tender. Mash the batwan until the juices release.

In a pot, saute the garlic, lemongrass and ginger in atsuete oil.

Add the about 1 ½ cups of the puree batwan.

Pour the brown sugar, soy sauce and fish sauce. Simmer for 10 mins or until the sauce thickens.

Season with salt and pepper the finish with butter. Stir constantly to incorporate the butter in the glaze
