A sweet and succulent chicken stew!
In a pot, sear the chicken pieces. Set aside
In the same pot, saute the red onions and garlic for 2 mins.
Add the the cinnamon bark, bay leaves, cloves and star anise. Toast until fragrant.
Stir in the banana ketchup, soy sauce, brown sugar, chicken cube, pineapple juice and pineapple syrup.
Add the seared chicken and white vinegar then boil for 3 mins.
Lower the heat and simmer for 30 mins.
Once the sauce has thicken add the pineapples and season with salt and pepper. Simme for another 5 mins.
Transfer to a serving bowl and serve with rice
