Chocolate Ube Pancakes

Pancake Batter
 2 eggs
 2 tbsp granulated sugar
 1 cup milk
 2 tsp baking powder
 2 tsp vanilla sugar
 2 tbsp cocoa powder
 2 ¾ cups all=purpose sugar
Ube Ganache
 ¾ cup all-purpose cream
 1 cup white chocolate
 1 tbsp butter
 ½ tbsp ube extract
 1 tsp salt
Start the pancakes

In a bowl whisk together eggs and granulated sugar until pale and fluffy.

Add flavorings

Add the milk, baking powder, vanilla, cocoa powder, and all-purpose flour. Mix or beat with a hand mixer until smooth.

Cook pancakes

Heat a non-stick frying pan over medium heat. For each pancake, gently pour 1-2 tablespoons of the batter onto the hot pan. Cook until the bubbles form on the surface and a few have burst, then flip the pancake carefully and cook for two minutes more. Once both sides are cooked, transfer to a serving plate. Continue with the rest of the batter then set aside to do the ube chocolate sauce.

Make the ube ganache

Simmer the all-purpose cream in a saucepan.

Melt the chocolate

In a bowl combine the white chocolate and simmered cream. Cover the bowl for a minute, then mix until well combined.

Add ube flavor

Add the butter, ube extract, and salt. Mix until smooth.

Pour and serve

Pour the ube ganache on top of the chocolate pancakes and serve.
