Sinigang
 500 g littuko (yantok)
 1 kg pork liempo
 1 pork cube
 2 cups 1/2 water
 3 red onions chopped
 3 tomatoes chopped
 5 smashed garlic cloves
 3 siling haba
 1 radishsliced
 salt to season
 pepperto season
 1 tbsp patis (fish sauce)
 cooking oilfor frying
 spring onionfor garnish
Vegetables
 1 cup kangkongblanched
 ½ cup sitawblanched
Sinigang Gravy
 1 tbsp butter
 1 tbsp all-purpose flour
 2 cups sinigang stock
 salt to season
 pepperto season

In a pot, boil the littuko until tender. Smash the littuko and strain to get the juices.

Add the pork liempo in the pot then add more water until the liempo is submerged. Boil for 15 minutes.

Strain the impurities from the soup. Add the red onion, tomatoes, garlic and siling haba. Simmer for 45 minutes until the pork is tender.

Add the radish and siling haba and simmer for another five minutes. When done Separate the pork and vegetables from the soup and set both aside.

Chill the pork for an hour. Fry until crispy.

Sinigang Gravy

In a pan, melt the butter then add the flour.

Cook the roux until it turns brown.

Gradually add the sinigang soup while stirring. Boil for three minutes.

Season with salt and pepper.

Assembly

Heat up a sizzling plate then palace the crispy pork liempo and vegetables. Drizzle with the sinigang gravy and garnish with spring onion. Serve.
