 500 g eggplantslit into strips
 3 cups canola oil
 1 cup all-purpose flour
 1 cup breadcrumbs
Thousand Island Dip
 ½ cup tomato ketchup
 ½ cup mayonnaise
 1 tbsp Worcestershire sauce
 1 tbsp pickle relish
 1 tbsp chopped red onions
 1 tbsp apple cider vinegar
 salt
 pepper

Submerge the eggplant in water with salt for 30 mins.

Pat dry the eggplants then drench with all-purpose flour.
