Indulge in the perfect balance of light, fluffy, and chewy with these Fluffy Donuts, a delightful twist on a classic treat. Infused with the subtle richness of tofu, these donuts achieve a soft, pillowy texture with a satisfying chew that sets them apart from the usual deep-fried confections.
This simple yet unique recipe combines cake flour for tenderness and glutinous rice flour for that signature mochi-like bite. Baking powder gives them just the right lift, while a touch of granulated sugar adds sweetness. The star ingredient—silken tofu—not only enhances the texture but also makes these donuts extra moist without the need for eggs or dairy. A splash of water brings everything together, forming a smooth, pliable dough that’s easy to shape.
Once formed and placed on parchment paper, the donuts take a quick dip in hot oil, frying to a gorgeous golden brown. The result? A crisp, delicate exterior that gives way to an irresistibly soft and chewy center.
To elevate these donuts even further, a luscious ube glaze brings a pop of color and subtle sweetness. A mix of powdered sugar, ube powder, and milk (or water) creates a smooth, glossy coating that clings beautifully to each donut, making them as visually stunning as they are delicious.
Perfect for breakfast, snack time, or an indulgent dessert, Fluffy Donuts are a guilt-free pleasure with a unique texture you’ll love. Serve them warm and watch them disappear—these are donuts like no other!
In a large bowl combine cake flour, glutinous flour, baking powder, and granulated sugar. Set aside.
In another bowl smash the tofu. Transfer it to the dry ingredients and mix until it forms into a dough. Add water if needed.
Shape the dough into small balls, about 6g each or the size of marbles. Place the dough balls into the parchment paper. Forming like a donut.
Preheat the cooking oil in a pot to medium heat. Fry the donut until it is light golden brown then set aside.
