Combine the guinamos, garlic, ginger, calamansi juice, white vinegar, red chillies and brown sugar in a bowl. Mix well and season with pepper.

In a container, place the pork chops and pour the marinade. Marinate the pork chop for at least 30 minutes on each side. When done Strain the marinade and set aside the pork chop.

In a bowl combine the potato starch, garlic powder, cayenne powder, salt, and pepper. Mix well to incorporate everything.

Coat the pork chop with the flour, egg, and seasoned potato starch.

Fry the pork chops until golden brown.

Serve with rice, onion leeks, fried garlic, fried saba, and seasoned vinegar.
