Guinamos Fried Pork Chops

Enjoy the rich flavors of fried pork chops marinated in ginamos, offering a perfect blend of savory and salty. Crispy on the outside and tender on the inside, these chops are a delicious twist on a classic favorite.

 ½ cup guinamos
 5 cloves garlic
 1 tbsp grated ginger
 2 tbsp calamansi juice
 2 tbsp white vinegar
 3 red chilischopped
 1 tbsp brown sugar
 1 kg pork chopsliced into ½ inch thick
 ½ cup all-purpose flour
 2 eggs
 1 cup potato starch
 1 tbsp garlic powder
 1 tbsp cayenne powder
 cooking oilfor frying
 salt to season
 ground black pepperto season
 5 fried saba bananassliced in half
 onion leeksfor garnish
 fried garlicfor garnish
 seasoned vinegarfor garnish

Combine the guinamos, garlic, ginger, calamansi juice, white vinegar, red chillies and brown sugar in a bowl. Mix well and season with pepper.

In a container, place the pork chops and pour the marinade. Marinate the pork chop for at least 30 minutes on each side. When done Strain the marinade and set aside the pork chop.

In a bowl combine the potato starch, garlic powder, cayenne powder, salt, and pepper. Mix well to incorporate everything.

Coat the pork chop with the flour, egg, and seasoned potato starch.

Fry the pork chops until golden brown.

Serve with rice, onion leeks, fried garlic, fried saba, and seasoned vinegar.
