In a blender, blend the garlic, ginger and red onion. Set aside

In the same blender, place the red bell pepper, saba, white vinegar, and soy sauce. Blend until well combined.

In a pan, saute the onion mixture for 3 mins or until fragrant.

Add the tomato paste and cook until the oil renders.

Add the paprika, cloves, cayenne pepper and brown sugar. Stir to incorporate everything.

Pour the banana mixture and water.

Boil for 5 mins then lower the heat and simmer for 10-15 mins or until the mixture thickens.

Season with salt and pepper.
