 1 pc garlicpeeled and smashed
 1 pc red onionchopped
 2 tbsp gingersliced thick
 1 pc native chickenwhole, cut into pieces
 1 pc lemongrass stalksmashed
 1 cup vinegar
 salt and cracked black pepper, to taste
 4 cups coconut cream

In a palayok, brown the native chicken, garlic, then add onion, and ginger until the chicken renders its fat.

Add pepper, lemongrass, and vinegar, allow to boil. Do not stir until the vinegar smell has disappeared.

Season with salt, and add coconut cream. Allow simmering for a few more minutes.
