First, make the crust. Combine butter, sugar, vanilla extract, all-purpose flour and eggs. Mix until well combined.
Pour the crust mixture in a prepared baking pan with parchment paper. Bake in a preheated 163C/325F oven for 20 minutes until the sides turn to light brown. Remove from the oven and dock it using a fork and set aside.
Put the peeled katmon in a blender. If the fruit is still tough then cut them into pieces. Put a bit of water and blend. Push the liquid thru a cheese cloth and extract the juice.
Next make the filling by combining all-purpose flour, sugar, and katmon juice. Mix until well combined.
Pour the mixture on top of the pre-baked crust. Bake it for another 20 minutes, until the center has set. Let it cool before slicing into squares.
