Lechon Sauce

The classic lechon sauce!

 2 tbsp vegetable oil
 ¼ kg pork liver
 ¼ kg chicken liver
 2 tbsp minced garlic
 1 red onion
 1 cup white vinegar
 ¾ cup soy sauce
 1 cup brown sugar
  cup bread crumbs
 salt and pepper to season

In a pot, cook the pork and chicken liver for 5 mins. Set aside.

Once the pork and chicken livers are cooled, mashed or blend in a food processor. Set aside.

In the same pot, saute the garlic and onions.

Pour back the liver mixture and cook for 2 mins.

Add the water and vinegar then boil for 3-5 mins.

After boiling, stir to incorporate everything. Add the soy sauce, bread crumbs and brown sugar. Simmer for 3 mins or until you reach your desired consistency.

Season with salt and pepper. Serve
