Level up your usual salabat with this cooler version!
Make the simple syrup first by by combining 1/2 cup sugar and 1/2 cup water in a pot over medium heat. Mix until the sugar dissolves. Set aside.
Make salabat by boiling 1/2 cup brown sugar, 1/2 cup water, and the ginger in a pot over medium heat. Stir until fragrant and sugar is dissolved.
In a pitcher, place the simple syrup, salabat, and lemon juice. Mix.
Pour half of the juice onto serving glasses with ice and top with carbonated water. Serve cold.
