Heat 2 tablespoons of oil in a large pot. Sear beef short ribs. Set aside.
In the same pot use the remaining 2 tablespoons of oil, saute onion and garlic until translucent.
Add the beef, tomatoes, watermelon, gabi, cooked beef and water. Bring to a boil.
Reduce heat to a simmer and cook until beef is tender (about 1-2 hours).
Add sinigang powder mix and sitaw. Simmer until vegetables are cooked.
Add kangkong last. Season with patis and pepper.
