Mantecado Butterbeer

When Harry Potter first introduced butterbeer into our vocabulary we knew we needed to try this drink. Soon after different versions came to life and this is our take on the infamous Wizarding World beverage.

Butterscotch
 1 cup brown sugar
 2 tbsp water
 6 tbsp butter
 ¾ cup all-purpose cream
 ½ tsp apple cider vinegar
 2 tbsp rum
Butterscotch Cream
 ¾ cup all-purpose cream
 2 tbsp butterscotch
Assembly
 1 can rootbeer
 1 shot vodka
 2 butterscotch whipped cream
 mantecado ice creamfor topping

First make the buttercream. Melt brown sugar and water together. Let boil and then lower heat.

Add butter and cream, and let boil again. Turn off heat, and then add apple cider vinegar and rum.

Whip together cream and butterscotch to make the butterscotch cream.

Here's how to assemble your butterbeer. In a tall glass add in about 1/4 cup of butterscotch. Pour half of the rootbeer and the shot of vodka. Add in the 2 dollops of butterscotch cream. Next, pour the rest of the rootbeer then top with about 2 scoops of mantecado ice cream. Serve immediately.
