A delcious iconic Pinoy noodles!

In a pot add the shrimp head and water. Using a spoon or fork crushed the shrimp heads to extract the flavor. Boil for 8-10 mins then discard the shrimp head and set aside the stock.

In a separate pot, combine the vegetable oil and annatto seeds. Cook for 2 mins until the color of the oil turns orange. Discard the annatto seeds

Saute the ground pork, red onions and garlic in the annatto oil for 5 mins. Add the flour and cook for another 3 mins.

Pour in the shrimp stock, water and pork cube. Boil for 2 mins while stirring to avoid lumps.

Season with fish sauce, salt and pepper. Set aside

In a plate, add about 1 ½ cup of rice noodles.

Pour 1 cup of Palabok sauce then top with tinapa flakes, chopped chicharon, boiled eggs, and shrimp.

Garnish with fried garlic, green onions and calamansi.
