An umami rich and sweet wings perfect for the kids!
In a bowl combine the chicken wings, chicken powder, salt, pepper and fish sauce. Marinade for at least 30 minutes.
When ready to fry combine the all-purpose flour and cornstarch in a bowl. Dredge the marinated chicken wings one by one until all the sides are coated.
Heat the cooking pot with cooking oil for deep-frying. When the oil is ready drop the chicken wings one by one until golden brown, about 10-12 minutes. When all the pieces are done set the aside.
In a large pan with cooking oil sauté the shallots/onions, garlic, and ginger until crisp. Once remove have of the aromatics then add in the light brown sugar, apple cider vinegar, and water. Stir until the sugar has dissolved. Let it reach to a boil then simmer the liquid until it thickens into a glaze.
When the sauce thickens add in the chicken wings until everything is well coated with the glaze. Garnish with the reserved fried aromatics and green onions.
