Pork Pineapple Skewer

A delicious combination of pork and pineapple skewer!

Marinade
 1 cup pineapple juice
 ¼ cup brown sugar
 ¼ cup calamansi juice
 ½ cup soy sauce
 2 tbsp banana ketchup
 1 tbsp minced garlic
 1 tbsp grated ginger
 2 tbsp cooking oil
 3 pcs siling labuyo
 salt and pepperto season
Barbecue
 1 kg pork shoulderthinly sliced
 1 pineapplechopped
 2 red onionschopped
 salt and pepperto season
 cooking oil
Marinade

In a bowl, combine all the ingredients. Season with salt and pepper then set aside

Barbecue

Combine the pork shoulder and marinade. Marinate for at least 4 hours.

Build your barbeque, alternate the pork, pineapples and red onion.

Grill the barbecue for 5-7 mins or until the pork is cooked. Occasionally baste the barbecue with the marinade

Serve with rice and your choice of dipping sauce.
