Who knew it was this easy to go green!
In a non-stick pan over medium high heat fry the bacon strips in cooking oil until crisp.
Remove the bacon from the pan and chop it into small pieces. Set aside.
Fill a medium-sized pot over medium-high heat with water. When the water starts to boil add the potatoes and let it cook until tender.
Mix the sour cream with the lemon juice.
Add the potatoes to the dressing mixture and gently toss. Add the chives then toss again. Season with salt and pepper to taste.
Cut the ripe avocado into cubes.
Line a serving plate with lettuce, place the dressed potatoes on top. Add the avocad then finish with chopped bacon on top.
