Sinigang Na Hipon Sa Buko

 2 cups 1/2 water
 ½ cup red onionsquartered
 ½ cup tomatoesquartered
  cup gingerpeeled and sliced
 ½ cup singkamassliced
 1 cup 1/2 coconut juice
 1 pack Maggi® Magic Sinigang Mix
 ½ cup sitawcut into 2-inch pieces
 6-8 pieces sugpo
 1 cup okrasliced in half
 1 cup buko strips
 1 whole eggplantsliced diagonally
 2 tbsp 1/2 sugar
 2 tbsp patis
 ½ tbsp ground black pepper
 ½ cup kangkong leaves

In a pot, boil onions, tomatoes and ginger in 2 1/2 cups of water.

Add singkamas, coconut water, and Maggi® Magic Sinigang Mix. Let it simmer for a few minutes.

Mix in radish, sitaw, and sugpo. Simmer.

Add okra, buko strips, eggplant, sugar, patis, and black pepper. Stir and simmer.

Add kangkong and remove from heat. Serve hot and enjoy this hearty dish with the family!
