Sweet and Sour Eggplant

A Crunchy Eggplant topped on an appetizing sweet and sour sauce!

Fried Eggplant
 500 g eggplantslit the eggplant into strips
 oil for frying
 flourfor dusting
 breadcrumbs for breading
Batter
 1 cup flour
 2 cups cornstarch
 1 tbsp grated garlic
 ½ tbsp paprika
 2 tsp pepper
 ½ tbsp salt
 ½ cup water
Sweet and Sour Sauce
 3 tbsp soy sauce
 2 tbsp ketchup
 4 tbsp white vinegar
 ¼ cup white sugar
 1 cup pineapple juice
 ½ cup vegetable oil
 2 red bell pepper
 1 red onion
 salt and pepperto season
 1 small can pineapple chunks

Submerge the eggplant in water with salt for 30 mins.

Pat dry the eggplants then drench with flour.

Dip in the batter then cover with breadcrumbs.

Fry the eggplant until golden brown. Serve with sauce

In a bowl, combine the ketchup, soy sauce. White vinegar, white sugar and pineapple juice. Mix until well combined

In a pan, heat up the vegetable oil. Once the oil is hot, pour the ketchup mixture.

Boil for 5 mins then simmer until the sauce is well combined. Season with salt and pepper
