Here's a fast, fresh, and super easy chicken meal
In a bowl mix the egg whites, all-purpose flour, cornstarch, water, salt, and vegetable oil mix until well combined.
Add the chicken into the batter. Mix until every piece is well coated.
Prepare a frying pan or skillet with about two inches of oil over medium-high heat. Once the oil is at smoking point, deep fry the chicken pieces until golden brown. Do this in batches so that the chicken pieces will cook evenly. When all the chicken pieces are done, set them aside on a plate lined with a paper towel so it can absorb the excess oil.
Prep another sauté pan over medium heat. Add the tablespoon of vegetable oil and sauté the garlic until aromatic. Bring the cooked chicken pieces into the pan. Pour the sweet chili sauce, lemon juice, salt, and pepper. Stir and coat the chicken evenly with the sauce. Add the toasted peanuts and sesame seeds. When done remove from the pan.
Before serving garnish the chicken with chopped chili and cilantro. Serve immediately.
