In a casserole over medium-low heat melt the butter and pan-fry the ham for two minutes. When the ham has cooked add the garlic, onions, and chilies then sauté for two minutes.

Add the mussels and the curry powder. Cover the casserole and cook the mussels for three minutes.

Pour in the white wine and simmer for two minutes. Add the all-purpose cream and tarragon.Season with salt ground white pepper.

Remove from heat and garnish with more fresh tarragon leaves.
