Tahong in Tarragon Sauce

A flavorful and creamy mussel dish you must-try!

 4 tbsp unsalted butter
 5 slices ham
 3 slices butter
 3 cloves garlic
 1 white onion
 2 red chillies
 ½ kg fresh musselsscrubbed and beards removed
 ¼ tsp curry powder
 ½ cup white wine
 1 cup all-purpose cream
 5 sprigs tarragonchopped plus more for garnish
 salt to season
 ground white pepperto season

In a casserole over medium-low heat melt the butter and pan-fry the ham for two minutes. When the ham has cooked add the garlic, onions, and chilies then sauté for two minutes.

Add the mussels and the curry powder. Cover the casserole and cook the mussels for three minutes.

Pour in the white wine and simmer for two minutes. Add the all-purpose cream and tarragon.Season with salt ground white pepper.

Remove from heat and garnish with more fresh tarragon leaves.
