Enjoy a new take on banana bread with the nutty goodness of tempeh. This protein-rich, super moist loaf combines sweet bananas and fiber-rich tempeh for a perfect snack or breakfast treat.
Cream the butter and dark brown sugar until light and fluffy.
Sift the all purpose flour, baking soda and salt in a bowl. Mix the dry ingredients and wet ingredients.
In another bowl, mash the tempeh with the banana. Set this aside.
Add the eggs one at a time and mix. Afterwards, add the mashed tempeh and banana. Mix until well combined.
Pour and spread the batter into the prepared baking pan and bake for 60 minutes at 170°C/350°F.
Add chopped walnuts to the top, if preferred. Let it cool and serve.
