In a food processor, blitz the peanuts for a few seconds until a fine crumb. Transfer to a bowl.

Add sesame seeds, sugar, and salt to the peanuts and mix until well combined. Set aside.

Assemble the lumpia. Lay the lumpia wrappers down and place tikoy strips about 1 1/2 inches from the edge of the wrapper. Spread ube jam, sprinkle a bit of the peanut mixture, and add langka slices. Roll and seal. Repeat for remaining ingredients.

Fry in oil. Serve with more peanut mixture, or even with a scoop of ice cream on top!
