In a bowl, combine all the ingredients then set aside.
In a pan, cook the tocino. Set aside the tocino.
In a different pan fry the garlic. Add the rice then season with salt and pepper.
Stir well to incorporate the garli, oil and rice. Set aside
In a chopping board or plate place a tortilla.
Add about ½ cup of garlic rice, 3-4 pcs of tocino, scrambled egg and cheddar chees in the the middles of the tortilla.
Fold the tortilla and seal with toothpicks. Make more chimicganga until all mthe ingredients are used up.
Deep-Fry the chimichangas until crispy.
Serve with sour cream and pico de gallo
