In a large bowl, combine flour, sat, egg, egg yolk, ube jam and food coloring. Mix until smooth and shape into dough. Rest for ten minutes.
Cut the dough into 4, and dust the pasta maker with dust and gently roll the dough in the pasta maker until flatten.
Switch the pasta maker attachment to the pasta slicer. Dust the dough with flour and roll it into pasta by gently rolling it.
In a pot of boiling water, cook the ube pasta until al dente, about 2-3 minutes.
In a pan over medium heat melt the butter. Whisk in the all-purpose flour and slowly pour in the milk.
Add the cheddar cheese and mix until melted.
Serve the pasta with cheese sauce on top.
