Filling and topping

In a bowl, pour the warm milk. Sprinkle the yeast and about 1 teaspoon of sugar then mix. Let the mixture stand until it's foamy

In a large, mixing bowl combine, the all-purpose flour, egg, melted butter, ube flavoring and the milk-yeast mixture.

Knead the dough until smooth. If the dough is sticky, add more all-purpose flour.

After the dough is smooth, cover it with cling wrap and let it rest for an an hour or until it has double in size.

Second Dough

Deflate the risen dough and dust some flour on a clean surface.

Using a rolling pin roll the dough into a rectangle about 1/4 inch thick.

Spread the shortenng over the rolled first dough.

Fold it again in the same way and rolled it out. Starting on the long edge, roll the dough into a tight log.

Using a knife, slice the dough into 1/2- inch portions. Take one portion and roll it very thinly into an oval shape.

Put the oval-shaped dough into the sugar and place it on a prepared baking sheet with parchment paper.

Bake it in the pre-heated 180C/350F oven for about 15 minutes or until golden brown.

Allow the otap to cool completely before serving
