Cream butter and sugar together with a mixer until light and fluffy. Add in the egg and mix, about two minutes.
Add in the cocoa powder, baking soda, salt, and vanilla extract, and red food coloring. Scrape down the sides of the bowl with a spatula and mix again for another minute.
Add in the all-purpose flour and mix until fully combined. Chill the dough for at least two hours so the flavors fully develop.
Scoop the dough with an ice cream scooper and place it on a baking tray lined with parchment paper. Bake for 10-12 minutes in a preheated 375°F oven.
Pour hot milk over the white chocolate and let it melt. To make the process go fast you can also melt the white chocolate in the microwave every 10 seconds until it fully melts. Set aside.
Divide the melted chocolate in half and put in a drop of red food coloring in one bowl. Mix well until it turns pink. Set aside the white and pink melted chocolate bowls.
When cookies are baked let them cool for a bit. When they're good to handle dip the cookies alternating between the white chocolate cookies and pink sprinkles and pink white chocolate and white sprinkles for variety. Serve.
