Ingredients:
Soup Base:
3 cups water
1⁄2 kilo beef ribs, cut into pieces
2 cups tomatoes, quartered
1 1⁄2 cups red onion, sliced into wedges
1 tablespoon salt
1⁄2 cup sampalok paste or sinigang mix
2 tablespoons patis
1 1/2 tablespoon TABASCO® Habanero Pepper Sauce
Toppings:
1 pack flat rice noodles
1⁄2 kilo pork belly, cut into thin strips
1 cup radish, sliced thin
2 pieces gabi, chopped into bite-sized pieces
1 cup okra, sliced in half
5 pieces tomatoes sliced into wedges
1 cup sitaw cut into 2-inch pieces
1 cup eggplant, sliced diagonally
2 cups kangkong, sliced
Procedure:
1. In a large pot, place water, beef ribs, tomatoes, onions, and salt then bring to a boil. Simmer for about 10 – 15 minutes. Remove scum.
2. Mix in sampalok paste or sinigang mix, patis, and TABASCO® Habanero Pepper Sauce until well combined. Add more water to adjust taste if necessary. Bring to a boil and simmer. Remove beef ribs and keep for other preparations or serve with the final dish.
3. Transfer soup to a serving hotpot over medium-low heat and add flat rice noodles. Add toppings: pork belly slices, radish, gabi, okra, tomatoes, sitaw, eggplants, and kangkong. Simmer until cooked. Serve hot!
